I didn't work for Enron, but my last construction employer was just as bad. Should I take that construction employer off my construction resume?

No. Use that experience to your advantage. Many companies are looking for employees that have weathered storms and know how to behave when things get ugly. Anybody can thrive in boom times. Savvy companies today are looking for people who can help them sustain the good times and turn around the bad times. If you haven't weathered any storms, you don't know what to do when one hits.
